controls are explained in game but : 

 - esc for pause menu + if you don't have your mouse in the menu because you got eaten by the triangles, to restart the menu

the longer you hold left click, the higher the jump force will be (with maximum reached when the square is red), and when you release, the square will jump towards your mouse
